I’ve never heard of some of the games on your list. Bully is one. But out of this one, I played Red Dead 2 to completion. I found it clunky, at times, but enjoyed it. I can’t remember which ending I got, though. GTA 5 is so much fun. I’ve never finished it, though. I keep having to give it a rest because I find myself doing nothing more than playing Trevor, stealing trucks and running over cars and people. On the plus side, it’s a good way to release pent-up tension and anxiety!
I agree that RDR2 has it’s fair share of jank but overall I found it a tremendously immersive world and story. And I definitely relate to the release of pent up tension through chaotic antics as Trevor ๐ it’s a perfect way to blow off a little steam.

Is this the same Rockstar that puts out the energy drinks?

No as far as I’m aware they are separate entities.
